BBQ Chicken Pizza is a favorite around our house and that is why when I saw this recipe I had to try it. I can't even remember where I found this recipe. While this wasn't my favorite dinner, it was super easy and the kids sure did like it and had seconds the next day for lunch (which is rather unusual, my kids are picky). It is kind of like a deluxe hamburger helper type meal, you cook it all in a skillet on the stove. It's definitely worth a try :)
1 T. Olive Oil
2 boneless skinless chicken breasts, cute into bite-size chunks
1 red onion, diced
3 cups water
2 1/2 cups chicken broth
1/2 tsp salt
12 ounces penne pasta
2/3 cup barbecue sauce
1/3 cup sour cream
1/2 cup shredded mozzarella
1/2 cup sharp cheddar
In large (12 inch) skillet heat olive oil and cook chicken and onions. When chicken is cooked through remove from pan.
In same pan add the water, chicken broth, penne, and salt. Bring to boil and simmer for 12-15 minutes, until the liquid is almost absorbed, the pasta is tender and the mixture is thick and syrupy. Stir in the barbecue sauce and sour cream. Add in reserved chicken and onions, and shredded cheese's. Stir to combine and until everything is heated through
Serve immediately. Garnish with additional red onions, shredded cheese, and if you like cilantro I think it would go great as a garnish. Shawn and I also thought it would be better to use Gouda cheese, rather than mozzarella, since that is what we use on BBQ chicken pizza and love it.
