I almost always have a pork Tenderloin on hand because my kids and hubby both love it. I found this quick recipe the other day and it was an instant hit. The pork turned out really tender and juice with great flavor.
1. Rub tenderloin with olive oil, dijon mustard and sprinkle with garlic powder, salt & pepper.
2. Roll tenderloin in breadcrumbs. I mixed some dried rosemary in with my breadcrumbs.
3. Sear in frying pan with butter.
4. Bake at 425 for 35 minutes and then let it rest of 10 minutes.
