Voodoo Chicken Salad
Supposedly, this is the Rumbi Island Grill Voodoo Chicken Salad Recipe, but I've never actually had the salad in the restaurant so I can't say if it tastes like it or not. But, what I can say that this recipe is really good. It is a nice simple salad, with a great dressing. The dressing has a nice kick and lots of flavor!
Salad:
3 cups lettuce mix
2 T. feta cheese
2 T. diced tomatoes
1/4 cup tortilla strips
1/2 cup voodoo dressing
1/2 cup chicken breast, diced
Voodoo Dressing: (I halved this dressing, it makes a lot)
1/4 cup fresh lime juice
1/4 cup chili paste
2 T. crushed red pepper
3/4 cup lite mayo
1 1/2 cup sesame oil
1 cup rice wine vinegar
1/2 cup soy sauce
1 1/2 cups white sugar
1/4 cup minced garlic
1/3 cup pureed ginger
Place all ingredients into blender and mix.

Winter Fruit Salad
This is a really great salad. The dressing is yummy and sweet and it's loaded with fruit. It does go soggy pretty fast, so don't make it too far in advance.
Dressing:
1/2 C sugar
1/3 C lemon juice
1 tsp. dijon mustard
2 tsp. chopped onion
1/2 tsp. salt
2/3 C oil
1 T. poppy seeds
Salad:
I head iceburg lettuce, chopped
4 oz. shredded swiss cheese
1 cup cashews
1 cup craisins
2 apples, chopped
2 pear, chopped
Mix salad ingredients together and pour in dressing. Mix well and serve.

Pineapple Ginger Fruit Salad
1 pineapple chunked into bite size pieces
2 kiwis thinly sliced
1 cup coconut
2 limes zested and juiced
1 inch piece of ginger root peeled
1/3 cup sugar
1/4 cup water
Combine coconut with lime zest. Toast until golden brown
Put lime juice, water, sugar, and ginger in a sauce pan. Bring to a boil and sugar is dissolved. Remove from heat and let stand.
Arrange pineapple and kiwi on plate. Scatter coconut mixture over fruit. Drizzle with ginger syrup.
*I read some people added strawberries and Mandarin oranges.

Cafe Rio Chicken, Rice and Dressing
This recipe is a little different from one I have used in the past, but I like it a little better. I use either the shredded pork or the chicken from this recipe.
Rice
3 cups water
4 teaspoons chicken bouillon
4 teaspoons garlic-minced
1/2 bunch cilantro
1 can green chiles (or equivalent fresh)
3/4 teaspoon salt
1 Tablespoon butter
1/2 onion-chopped
3 cups rice
Blend cilantro, green chiles and onion together in a food processor. Bring water to a boil and add all the ingredients. Simmer covered for 30 minutes and then stir and serve.
Dressing
1 buttermilk ranch dressing packet (make as per recipe)
2 tomatillos
1/2 bunch of cilantro
1 clove garlic
juice of 1 lime
1 jalapeno
Use the food processor to blend all the ingredients well. Refrigerate.
Chicken
1 small bottle Kraft Zesty Italian Dressing
1 Tablespoon chili powder
1 Tablespoon cumin
3 cloves garlic-minced
5 lbs. chicken breasts
Cook all together in a crock pot for 4 hours. Shred meat and cook one additional hour.
