Chow Mein Noodles


Ingredients
  • 1/4 c. soy sauce
  • 1 Tbsp. brown sugar
  • 2 cloves garlic, minced
  • 1 tsp. fresh ginger, grated
  • ground black pepper, to taste
  • 2-3 Tbsp. vegetable oil
  • 3 (5.6 oz) packages refrigerated Yaki Soba noodles (found in the produce section of the grocery store.. usually the 3 packages are sold together in one 17oz. pack)
  • 2/3 c. chopped celery (chopped diagonally) **I actually just used Udon noodles that I had on hand, and it turned out great.**
  • 1 medium-sized onion, thinly sliced
  • 2 c. chopped cabbage
Instructions
  • In a small bowl combine soy sauce, brown sugar, garlic, ginger and black pepper. Set aside.
  • Remove Yaki Soba from packages and discard included flavoring packets. Rinse noodles well, drain, and set aside.
  • Heat oil in a large wok or skillet. Add celery and onion and saute for about 1-2 minutes or until onions start to become soft and transparent. Add cabbage and saute an additional minute or so.
  • Toss Yaki Soba noodles and soy sauce mixture with the vegetables over medium-high heat for an additional 2-3 minutes or until noodles are heated through.

Tangy Stuffed Peppers

I got this recipe from a co-worker and I have no idea where it is from, but it was delicious.  Four out of the five in my family asked for seconds.  It's simple and a perfect fall side dish.

4 large green peppers (or any color, I actually used red, orange, and yellow)
1 pound ground beef
1 small onion, chopped
1 1/2 cups cooked long grain rice
1/4 cup grated Parmesan Cheese
6 teaspoons Worcestershire sauce, divided
1/2 teaspoon salt
1 can (8oz) tomato sauce
2 Tablespoons water
additional Parmesan cheese

Cut tops off peppers and remove seeds.  Chop pepper tops and sauté in saucepan with ground beef and onion until meat is no longer pink.  Remove from heat and stir in rice, cheese, 4 tsp. Worcestershire sauce, and salt.

In a large saucepan, cook whole peppers in boiling water for 3-5 minutes.  Drain and rinse in cold water.  Spook rice and meat mixture into peppers.

Place in greased baking dish.  If needed slice a little off bottom of pepper so it will stand up straight.  Combine tomato sauce, water, and remaining Worcestershire sauce, drizzle generously over peppers and spindle with additional parmesan cheese, if desired.  Cover and cooke for 20 minutes and then uncover and cooke for 5 more minutes.

**I have been substituting ground turkey for ground beef in all recipes lately.  I just add a little extra seasoning to boost the flavor.  For this recipe I added 1/2 tsp. salt, 1/2 tsp. chili powder, 1/2 tsp. cumin, and 1/2 tsp. garlic powder.  It was perfect**

Best. Mexican. Rice. Ever. (Honey Chipotle Mexican Rice)

This rice has the perfect blend of smokey and spicy - not too acidic and not too sweet.  It's really good.  Sorry about the cut and paste job on the recipe - while I use all the ingredients listed, the quantities change depending on what type of rice I have. 

Directions:

  1. In a small saucepan, bring chile, tomatoes, water, onion, garlic, salt and red pepper to a boil for 2 minutes, then reduce to a simmer. Cook, slowly, covered for 15 minutes.
  2. Puree mixture in a blender (or use an immersion blender) until smooth. Stir in the honey and vinegar. You can make this ahead and refrigerate for a couple of days if needed. NOTE: You will need exactly 1 cup of the puree for the rice (I use however much i feel like). 
  3. Remove ribs and seeds from jalapenos and discard. Mince flesh and set aside.
  4. Place rice in a fine mesh strainer and rinse under cold running water until water runs clear- about 1 1/2 minutes.Shake rice vigorously to remove excess water.
  5. Heat oil in a large skillet or saute pan over medium high heat about 2 minutes. Drop a few rice grains in and if they sizzle then it is ready. Add rice and fry stirring until rice is light golden and translucent, about 5 minutes.
  6. Reduce heat to medium, add garlic and minced jalapenos and cook , stirring constantly until fragrant, about 1 1/2 minutes.
  7. Stir in broth, pureed mixture, and salt. Stirring frequently,continue cooking for 5 minutes or until rice is cooked through and the liquid has been absorbed, If the rice looks too dry before it is cooked through, add more puree or stock or plain water by tablespoonfuls to reach desired consistency.

Sweet and Hot Baked Beans

2 cans pork and beans
3 cans white beans
2 cans black beans
1 lb bacon
2 cups brown sugar
1 cups katsup
1 large onion
1 green pepper
1 orange pepper
1 jalapeno pepper
5 Tbsp worcestershire sauce

cook bacon, chop pepper and onion and saute in onion drippings. Combine everything and cook slowly for 3 hrs @300 or in crockpot.

This is a fun change on the original baked bean recipies. Very yummy and makes a ton!

Oven Brown Rice

I've been trying to transition from white rice to brown rice.  My family really likes white rice and brown has been a little harder to like :)  But this recipe makes delicious brown rice with very little effort.  You mix it together and then bake it in the oven.  It's simple and pretty fool proof.

1 cup brown rice
1 cup beef broth
1 (14.5 ounce) can chicken broth
1/4 cup butter, melted
1/2 tsp season salt
1/2 tsp garlic powder

Preheat oven to 350.  In a 2 quart casserole dish, mix together rice beef broth, chicken broth, butter, and garlic, & salt.  Cover and bake for 60 minutes or until liquid is absorbed and rice is tender.  You can also mix in sautéed mushrooms or any vegetable you like.  Very simple and delicious.

Quinoa


Quinoa is my new best friend :)  In my attempt to eat healthier this year I had a friend 
recommend Quinoa (prounced Keen-wa).  This is a super healthy grain with lots of 
protein, fiber, and nutrients.  My family isn't sold on it yet, but I keep trying.  It has a 
nutty flavor, but the texture is nothing like any other grain you've had before.  Just try 
it, please.  So far, this has been one of my favorite recipes.  It's simple, makes a great 
side dish and with a dash of lemon is perfect.  You can substitute quinoa in place of rice 
in most dishes.

                                      1 tablespoon butter
                        1 cup uncooked quinoa
                        2 cups vegetable broth
                        2 teaspoons chopped garlic
                        2 tablespoons chopped fresh parsley
                        1/2 tablespoon chopped fresh thyme
                        1/4 teaspoon salt
                        1 small onion, finely chopped
                        1 dash fresh lemon juice 

**I added some cooked edamame to this recipe and I really loved that addition.  I'm sure I'll make is that way all the time.

 Directions
 Melt butter in a saucepan over medium heat. Add the quinoa, and toast, stirring occasionally, until lightly browned, about 5 minutes. Stir in broth, and bring to a boil. Reduce to a simmer, cover, and cook for 20 minutes, or until quinoa is tender.

In a bowl, toss quinoa together with garlic, parsley, thyme, salt, and onion. Sprinkle with lemon juice, and serve.  This can be served hot or cold.

Hot and Cold Sesame Noodles

This is a nice, easy Asian dish.  It would work well as a side with a grilled piece of chicken/pork/fish.  This is a Rachel Ray recipe that I saved from a long time ago.  Shawn didn't love the cabbage in it, but I thought it was good.  I also think it would be good loaded with vegetables, like diced cucumber, carrots, peppers, etc.  You could even put in some peanuts for a nice crunch.


ingredients

  • 1/2 pound spaghetti
  • 1/4 cup Tamari dark soy, eyeball it
  • 1/4 rounded cup smooth peanut butter, softened in microwave 15 seconds on high
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon dark sesame oil, eyeball it
  • 2 tablespoons hot sauce  ( I actually used 2 tsp. of sriracha hot sauce instead)
  • 2 cups shredded cabbage and carrot mix, available in produce department
  • 1 cup bean sprouts or pea shoots, any variety, available in produce department
  • 3 scallions, chopped on an angle
  • 2 tablespoons sesame seeds

Directions

Cook pasta to al dente, with a bite to it, then cold shock it to stop the cooking process by running it under cold water in colander. Drain the pasta very well.
In the bottom of a large bowl, whisk together soy, peanut butter, vinegar, oil, sesame oil, and hot sauce. Add noodles and veggies and toss to combine the noodles and coat them evenly with sauce. Sprinkle scallions and sesame seeds throughout the salad and serve.

Mushroom Barley Pilaf

Shawn really likes mushrooms, which I think is weird, but anyway I try to find ways to cook with them.  This recipe makes a nice flavorful side dish.

  • 1/4 cup butter
  • 3 cloves garlic, pressed
  • 1 small onion, minced
  • 2 cups sliced mushrooms
  • 1/2 cup dry sherry
  • 2 (13.75 ounce) cans chicken broth
  • 1 cup pearl barley
  • 2 teaspoons dried basil, or to taste
  • salt and pepper to taste
  • 2 tablespoons chopped fresh parsley

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Melt butter in an oven safe large pot or Dutch oven over medium heat. Stir in garlic and onion, and cook, stirring occasionally until the onion has softened and turned translucent, about 5 minutes. Stir in the mushrooms, and cook until the mushrooms have softened and released their liquid, about 5 minutes more. Stir in the sherry, and simmer for 1 minute. Add the chicken broth, barley, and basil; bring to a boil over high heat. Season to taste with salt and pepper, and boil for 5 minutes.
  3. Cover the Dutch oven, and place into the preheated oven. Bake until the barley is tender, 45 minutes to 1 hour. Stir in chopped parsley before serving.

Cafe Rio Chicken, Rice and Dressing

This recipe is a little different from one I have used in the past, but I like it a little better. I use either the shredded pork or the chicken from this recipe.

Rice
3 cups water
4 teaspoons chicken bouillon
4 teaspoons garlic-minced
1/2 bunch cilantro
1 can green chiles (or equivalent fresh)
3/4 teaspoon salt
1 Tablespoon butter
1/2 onion-chopped
3 cups rice
Blend cilantro, green chiles and onion together in a food processor. Bring water to a boil and add all the ingredients. Simmer covered for 30 minutes and then stir and serve.

Dressing
1 buttermilk ranch dressing packet (make as per recipe)
2 tomatillos
1/2 bunch of cilantro
1 clove garlic
juice of 1 lime
1 jalapeno
Use the food processor to blend all the ingredients well. Refrigerate.

Chicken
1 small bottle Kraft Zesty Italian Dressing
1 Tablespoon chili powder
1 Tablespoon cumin
3 cloves garlic-minced
5 lbs. chicken breasts
Cook all together in a crock pot for 4 hours. Shred meat and cook one additional hour.

Easy Rice

I made this rice for dinner yesterday and was reminded how easy and great it is. So, I decided it would be a good recipe for the blog. Here it is.

Easy Dinner Rice
1 box of Uncle Ben's Wild Rice
1 cup white rice
3 1/4 cups chicken broth (almost two full cans)
3 Tablespoons butter

Combine all the ingredients, even the seaon packet from rice box, in rice cooker and cook. Yes, it is that simple. It turns out full of flavor and just a little nicer than regular rice for a side dish.
