Golden Sweet Cornbread


I'm still here, just haven't been cooking anything interesting lately.  We ate at the cheesecake factory a few weeks ago and I had the best sweet cornbread.  I didn't think I liked cornbread (too dry), but I was wrong.  So, I have been hunting for a nice sweet recipe.  This is another allrecipes recipe...and did I mention it is so simple.


1 cup flour
1 cup yellow cornmeal
1 tsp. salt
3 1/2 tsp. baking powder
1 egg
1 cup milk
1/3 vegetable oil

Mix all ingredients together and pour in a greased 9 inch round  baking pan (you could also make muffins) and bake at 400 for 20-25 minutes.  I took mine out at 20 minutes, but it could have used a minute or two longer.  This is good served with black beans, or just eat it plain or with honey.

*Jenn, I don't know if you already have a cornbread recipe, but this would be great as a side with all your wonderful mexican food!
